Preparation
- 1
Cut cauliflower into medium florets and peel and dice potatoes into 2cm cubes.
- 2
Heat vegetable oil in a large skillet over medium heat; add cumin seeds and toast until sizzling.
- 3
Add chopped onion, minced garlic, and grated ginger, sautéing for 5 minutes until soft and translucent.
- 4
Add chopped tomatoes, turmeric, garam masala, and salt; cook down for 4 minutes until a thick spiced paste forms.
- 5
Add the diced potatoes and cauliflower florets, stirring well to coat thoroughly with the spices.
- 6
Add 3 tablespoons of water, cover with a tight-fitting lid, and cook on low heat for 18 to 20 minutes, stirring occasionally, until vegetables are tender.
- 7
Remove the lid, turn up the heat for 2 minutes to evaporate excess liquid and develop light caramelisation, then garnish with fresh coriander.
