Preparation
- 1
Peel the potatoes and cut them into bite-sized cubes; finely chop the onion, garlic, and ginger.
- 2
Heat vegetable oil in a heavy-bottomed pot over medium heat, add cumin seeds, and let them crackle.
- 3
Add the chopped onion, cooking until soft and lightly browned, then stir in minced garlic and ginger for 1 minute.
- 4
Add tinned tomatoes, turmeric, and salt, cooking down for 5 minutes until oil starts separating from the sauce.
- 5
Add diced potatoes and 300ml of water, bring to a boil, then cover and simmer on low for 15 minutes until almost fork-tender.
- 6
Stir in the green peas and garam masala, continuing to simmer uncovered for another 6 to 8 minutes until potatoes are completely tender and sauce thickens.
- 7
Taste and adjust salt, then finish by scattering freshly chopped coriander over the curry before serving with rice.
