Preparation
- 1
In a large bowl, whisk 350 ml of warm water with 1/2 teaspoon of salt. Slowly pour in the maize flour while stirring with your fingers to prevent lumps, then knead for 2 minutes into a smooth, pliable dough. Rest for 5 minutes.
- 2
Divide the dough into 4 equal portions and shape each into a smooth disc about 1.5 cm thick.
- 3
Heat 1 tablespoon of vegetable oil in a heavy skillet or budare over medium heat. Cook the arepas for 5 to 7 minutes per side until a golden, crisp crust forms.
- 4
Meanwhile, heat the remaining oil in a saucepan over medium heat. Sauté finely chopped onion and minced garlic for 3 minutes until translucent.
- 5
Add the rinsed black beans, cumin, and a pinch of salt. Mash lightly with a fork and simmer for 5 minutes until thickened and aromatic.
- 6
Slice each warm arepa open like a pita pocket, leaving the back intact. Stuff generously with the warm seasoned black beans, sliced fresh avocado, and a squeeze of lime juice.
Look for precooked white cornmeal such as Harina P.A.N. for authentic arepas.
