Preparation
- 1
Poach the chicken breast in salted water for 15 minutes, cool slightly, and shred into fine threads.
- 2
In a bowl, mash one avocado and dice the other; mix with mayonnaise, sour cream, grated garlic, lime juice, chopped coriander, shredded chicken, and salt.
- 3
In another bowl, mix masa harina with warm water and a pinch of salt, kneading into a smooth, pliable dough.
- 4
Divide the dough into 4 balls and flatten each into discs about 1.5 cm thick.
- 5
Heat vegetable oil in a skillet over medium heat and sear the arepas for 5 minutes per side until a light crust forms.
- 6
Transfer the arepas to a 180°C (350°F) oven for 10 minutes until they sound hollow when tapped.
- 7
Slice open the warm arepas like a pita pocket and generously stuff with the creamy chicken-avocado filling.
Masa harina or pre-cooked cornmeal (Harina P.A.N.) is essential for authentic arepas.
