Preparation
- 1
Bring a large pot of salted water to a rolling boil and cook spaghetti until al dente.
- 2
Dice the bacon into small lardons and fry in a wide skillet over medium heat until crisp and rendered. Turn off the heat.
- 3
In a mixing bowl, whisk together the whole eggs, freshly grated Parmesan, and plenty of freshly cracked black pepper.
- 4
Transfer the cooked spaghetti directly into the pan with bacon and rendered fat, tossing to coat.
- 5
Allow the pan to cool slightly for 1 minute so the eggs will not scramble.
- 6
Pour the egg and cheese mixture over the pasta, tossing continuously and adding 2 to 3 tablespoons of hot starchy pasta water to create a glossy, creamy sauce.
- 7
Serve immediately with extra grated cheese and cracked black pepper on top.
