Cube the beef chuck and sear in butter in a saucepan over medium-high heat until deeply browned.

Add finely chopped onion and garlic, stirring until translucent and fragrant.

Stir in ground coriander, tomato paste, and tinned tomatoes along with 300 ml water; cover and simmer for 25 minutes.

Trim and slice okra into rounds, then stir into the stew and simmer for 10 minutes until tender.

Meanwhile, bring 600 ml of salted water to a boil in a separate pot and gradually whisk in the maize flour.

Stir the maize flour vigorously with a sturdy wooden spoon over low heat for 8 minutes until it forms a thick, smooth mound (asida/ugali).

Scoop portions of hot maize porridge into bowls and ladle the rich beef and okra stew all around it.
