Preparation

  1. 1

Peel and devein the shrimp, then pat dry thoroughly with paper towels.

  2. 2

Wash garlic chives and cut into 5 cm lengths; rinse and drain mung bean sprouts.

  3. 3

Heat vegetable oil in a wok over high heat until wisps of smoke appear.

  4. 4

Add sliced garlic and julienned ginger, stir-frying for 20 seconds until intensely aromatic.

  5. 5

Add the prawns in a single layer and sear for 1 to 2 minutes until pink, flipping once.

  6. 6

Splash in Shaoxing wine and oyster sauce, tossing quickly to coat the prawns.

  7. 7

Toss in the garlic chives and bean sprouts, stir-frying vigorously for 1 minute until tender-crisp.

  8. 8

Drizzle with sesame oil and transfer immediately to a warm serving platter.
