Swap Scotch bonnet chilli for Chilli flakes (1 chilli : 1 tsp) — Delivers comparable heat without the fresh chilli
Preparation
- 1
Finely chop the onion, garlic, tomato, spring onions, and Scotch bonnet pepper.
- 2
Heat vegetable oil in a skillet over medium heat.
- 3
Add the onion, garlic, and Scotch bonnet; cook for 2 to 3 minutes until soft and fragrant.
- 4
Add the chopped tomato and spring onion, cooking for another 2 minutes until the tomato breaks down into a light sauce.
- 5
Gently fold in the canned sardines along with their oil, flaking them into bite-sized pieces with a wooden spoon.
- 6
Season with salt, black pepper, and fresh lime juice, then simmer gently for 3 minutes until bubbling hot.
Canned sardines in oil or tomato sauce work equally well.
