  • Swap Scotch bonnet chilli for Chilli flakes (1 chilli : 1 tsp) — Delivers comparable heat without the fresh chilli

Preparation

  1. 1

Slice the onion thinly, chop the tomatoes, and finely mince the garlic and scotch bonnet.

  2. 2

Heat vegetable oil in a skillet over medium heat and sauté the onion and garlic until translucent, about 3 minutes.

  3. 3

Add the chopped fresh tomatoes, thyme, scotch bonnet, and black pepper, cooking until tomatoes break down into a sauce, roughly 5 minutes.

  4. 4

Carefully empty the tins of sardines along with their oil or sauce into the skillet, keeping the fillets largely intact.

  5. 5

Gently spoon the warm tomato sauce over the sardines and simmer on low for 4 to 5 minutes until heated through.

  6. 6

Squeeze fresh lime juice over the top just before serving alongside boiled ground provisions, rice, or bread.
