Preparation

  1. 1

Cook egg noodles according to package instructions in boiling water until just al dente, drain, rinse with cold water, and toss with a teaspoon of sesame oil.

  2. 2

Slice chicken into thin bite-sized strips and finely shred cabbage, carrot, and bok choy.

  3. 3

Heat 1 tablespoon of vegetable oil in a large wok over high heat. Add chicken and stir-fry for 4 minutes until golden and cooked through; remove and set aside.

  4. 4

Add the remaining vegetable oil to the wok, toss in minced garlic, and stir-fry for 30 seconds until aromatic.

  5. 5

Add shredded cabbage, carrots, and bok choy; stir-fry vigorously for 2 minutes until just tender-crisp.

  6. 6

Return chicken and cooked noodles to the wok, then pour in soy sauce and oyster sauce.

  7. 7

Toss everything continuously over high heat for 2 to 3 minutes until noodles are evenly coated and steaming, finishing with a drizzle of toasted sesame oil before serving.

Bok choy and Shaoxing cooking wine are available in Asian supermarkets.
