Preparation
- 1
In a bowl, mix room-temperature Greek yogurt with finely grated garlic and a pinch of salt; divide between two shallow bowls.
- 2
Bring a pot of water to a gentle simmer and poach eggs for 3 to 4 minutes until whites are set but yolks remain soft.
- 3
Melt butter in a small pan over medium heat; stir in chilli flakes and smoked paprika until foaming and fragrant, about 1 minute.
- 4
Lift poached eggs with a slotted spoon, drain briefly, and place two gently over each portion of yogurt.
- 5
Spoon the sizzling spiced butter directly over the eggs and scatter with fresh dill sprigs to serve immediately.
