Preparation

  1. 1

Cut the beef chuck into bite-sized 3 cm cubes and season thoroughly with salt.

  2. 2

Melt the butter in a heavy Dutch oven over medium heat, add finely sliced onions, and cook gently for 10 minutes until deeply golden.

  3. 3

Remove pan from heat briefly and stir in paprika, minced garlic, caraway seeds, and tomato paste until fragrant.

  4. 4

Return to medium-high heat, add the beef cubes, and stir well to coat in the onion and spice mixture.

  5. 5

Pour in the beef broth, cover with a tight-fitting lid, and simmer over low heat for 1 hour and 30 minutes until beef is becoming tender.

  6. 6

Add peeled diced potatoes and sliced bell pepper, then continue simmering covered for an additional 30 minutes until vegetables and meat are fork-tender.

  7. 7

Adjust seasoning with salt and black pepper, then ladle into warm bowls.
