Preparation
- 1
Divide the ground beef into 4 equal loose balls without overworking the meat.
- 2
Heat a heavy cast-iron skillet or griddle over high heat until smoking hot, then brush lightly with oil.
- 3
Place two meat balls onto the griddle and immediately smash each flat with a sturdy spatula into very thin patties.
- 4
Season aggressively with salt and black pepper.
- 5
Cook undisturbed for 2 minutes until deep brown crust forms around the edges.
- 6
Scrape and flip the patties, immediately top each with cheddar cheese, and cook for 1 more minute until cheese melts.
- 7
Toast the bread slices lightly in the residual pan drippings.
- 8
Assemble burgers on toasted bread with pickles and ketchup, then serve hot.
