Preparation

  1. 1

Bring a large pot of well-salted water to a vigorous boil and cook spaghetti until al dente.

  2. 2

While pasta cooks, dice the bacon and fry in a large skillet over medium heat until crisp; remove pan from heat.

  3. 3

In a bowl, whisk together 4 eggs (3 yolks plus 1 whole egg), finely grated parmesan cheese, and plenty of freshly cracked black pepper.

  4. 4

Reserve 120 ml of starchy pasta water before draining the cooked spaghetti.

  5. 5

Add the hot drained spaghetti directly to the skillet with cooked bacon and toss to coat in rendered fat.

  6. 6

Pour in the egg-cheese mixture quickly while vigorously tossing the pasta, adding splashes of pasta water to create a glossy, creamy sauce without scrambling the eggs.

  7. 7

Serve immediately in warm pasta bowls with extra parmesan and cracked black pepper.

Pancetta or unsmoked streaky bacon can be used interchangeably.
