Preparation
- 1
In a large bowl, whisk together the flour, salt, and sugar. Mix in 2 tablespoons of vegetable oil.
- 2
Gradually add 200 ml of warm water and knead for 8 to 10 minutes until a soft, pliable, and non-sticky dough forms.
- 3
Cover the dough with a damp cloth and allow it to rest at room temperature for 20 minutes.
- 4
Divide dough into 6 equal balls. Roll each ball into a thin round, brush lightly with oil, roll into a tight rope, and coil into a spiral.
- 5
Flatten each spiral with a rolling pin into a circular flatbread roughly 3 mm thick.
- 6
Heat a heavy skillet or tawa over medium-high heat. Cook each chapati dry for 1 minute until small bubbles form, flip, brush with oil, and cook until golden brown patches appear on both sides.
Traditional East African flatbread; resting the dough is crucial for soft, flaky layers.
