Blend together the bell pepper, scotch bonnet chilli, and half of the red onion until coarsely pureed.

Heat red palm oil in a saucepan over medium heat and sauté the remaining sliced red onion for 3 minutes.

Pour in the blended pepper mixture and fry for 8 to 10 minutes until oil floats to the top and moisture reduces.

Crumble in the stock cube and season with salt.

Add the drained black beans along with 150 ml of water, stirring well into the pepper sauce.

Cover and simmer gently on low heat for 15 minutes, mashing a small portion of the beans to create a rich, thick gravy.
Red palm oil imparts authentic flavour and colour; standard vegetable oil may substitute if unavailable.
