Swap Feta cheese for Cheddar cheese (1:1) — A firm salty cheese keeps the same role in the salad
Preparation
- 1
Peel and devein the prawns, patting them dry with paper towels.
- 2
Heat olive oil in a large skillet over medium-high heat, add the minced garlic and chilli flakes, and stir for 30 seconds.
- 3
Add the prawns and sear for 1 minute per side until pink, then transfer prawns to a plate.
- 4
Pour the tinned tomatoes and oregano into the same skillet, season with a pinch of salt, and simmer rapidly for 4 minutes until thickened.
- 5
Return the prawns to the sauce, crumble feta cheese generously over the top, cover with a lid, and cook for 2 minutes until cheese softens.
- 6
Garnish with chopped fresh parsley and serve bubbling hot straight from the skillet.
