Preparation

  1. 1

Thinly slice the beef steak across the grain and toss with cornstarch and half the soy sauce.

  2. 2

Cut the spring onions into finger-length pieces and finely julienne the fresh ginger.

  3. 3

Heat vegetable oil in a wok or heavy skillet over high heat until smoking.

  4. 4

Add the beef in a single layer and sear undisturbed for one minute, then flip and toss until browned.

  5. 5

Toss in ginger and garlic, stir-frying for thirty seconds until fragrant.

  6. 6

Add remaining soy sauce, Shaoxing wine, and spring onions, tossing briskly for one minute.

  7. 7

Remove from heat, drizzle with toasted sesame oil, and serve immediately.

Shaoxing wine is available at Asian grocers; dry sherry works as a substitute.
