Preparation
- 1
Boil whole unpeeled potatoes until completely tender, then peel while warm and pass through a ricer or mash thoroughly.
- 2
Mix mashed potatoes with flour and a pinch of salt, kneading lightly to form a soft, workable dough.
- 3
Roll dough into ropes, slice into 2 cm pieces, and drop into boiling salted water until they float, about 2 minutes; drain well.
- 4
In a pan, simmer minced garlic, tinned tomatoes, and olive oil for 10 minutes until thickened; season with salt and stir in fresh basil.
- 5
Toss boiled gnocchi directly into the tomato sauce, then transfer everything to a baking dish.
- 6
Top with torn fresh mozzarella and bake under a hot grill or 200°C oven for 8 minutes until cheese is melted and bubbling.
