Preparation
- 1
Thinly slice the beef and onion; finely grate the fresh ginger.
- 2
In a wide saucepan or skillet, combine beef broth, soy sauce, mirin, sake, sugar, and grated ginger over medium heat.
- 3
Bring the liquid to a simmer, then add the sliced onions. Cook for 5 minutes until soft and translucent.
- 4
Add the thinly sliced beef into the simmering broth, spreading the slices so they cook evenly without clumping.
- 5
Simmer gently for 3 to 5 minutes, skimming off any foam that rises to the surface, until the beef is just cooked through.
- 6
Spoon steaming hot short-grain rice into individual bowls.
- 7
Layer the simmered beef and sweet onions over the rice, ladle a generous spoonful of broth over the top, and garnish with sliced spring onions.
Japanese mirin and cooking sake are found in the Asian aisle or specialty grocers.
