Swap Scotch bonnet chilli for Chilli flakes (1 chilli : 1 tsp) — Delivers comparable heat without the fresh chilli
Preparation
- 1
Wash and roughly chop the spinach leaves. Finely dice the onion, tomato, spring onion, and garlic.
- 2
Heat vegetable oil in a large skillet or wok over medium heat.
- 3
Add the onion, spring onion, garlic, whole Scotch bonnet, and thyme sprigs; sauté for 2 minutes until fragrant.
- 4
Add the diced tomato and cook for 1 minute until it begins to soften.
- 5
Add the spinach in batches, tossing until all leaves wilt down into the aromatic seasoning.
- 6
Season with salt and black pepper, cover the skillet, and steam for 3 to 4 minutes until greens are tender.
- 7
Remove the thyme stems and whole Scotch bonnet pepper before serving hot.
Thyme and Scotch bonnet provide the authentic Jamaican pepper pot flavor.
