Swap Scotch bonnet chilli for Chilli flakes (1 chilli : 1 tsp) — Delivers comparable heat without the fresh chilli
Preparation
- 1
Finely shred the cabbage, julienne the carrot, and thinly slice the bell pepper and spring onions.
- 2
Heat the vegetable oil in a large skillet over medium-high heat.
- 3
Add the spring onion, minced garlic, thyme sprigs, ground allspice, and uncut Scotch bonnet pepper; sauté for 1 minute until fragrant.
- 4
Add the shredded cabbage, carrots, and bell pepper, tossing well to coat with the aromatics.
- 5
Season with salt and black pepper, then reduce heat to low and cover tightly with a lid.
- 6
Steam for 6 to 8 minutes, stirring once halfway through, until cabbage is tender yet retains a gentle crunch. Discard the whole chili before serving.
Scotch bonnet peppers can be substituted with habaneros.
