Preparation

  1. 1

In a small bowl, whisk together the white miso paste, mirin, cooking sake, granulated sugar, and sesame oil until completely smooth.

  2. 2

Pat the white fish fillets dry with paper towels and coat thoroughly with the miso marinade.

  3. 3

Let the fish marinate at room temperature for 20 minutes (or cover and refrigerate for up to 2 hours).

  4. 4

Preheat your oven broiler to high and line a baking sheet with foil, lightly oiling the surface.

  5. 5

Gently wipe off excess miso marinade from the fish fillets to prevent burning.

  6. 6

Arrange fillets on the baking sheet and broil 15 cm from the heat source for 8 to 10 minutes until deeply golden, caramelized, and flaky throughout.

  7. 7

Serve immediately with steamed rice or fresh Asian greens.

White miso paste is available at Japanese markets, health food stores, and major supermarkets.
