Preparation
- 1
Pat salmon fillets dry with paper towels and season very lightly with a pinch of salt.
- 2
In a small bowl, whisk together the soy sauce, mirin, cooking sake, and granulated sugar until dissolved.
- 3
Heat vegetable oil in a wide non-stick skillet over medium heat.
- 4
Place salmon fillets skin-side down and sear for 4 minutes until crisp, then flip and cook flesh-side down for 3 minutes.
- 5
Pour the teriyaki sauce mixture directly into the skillet around the salmon.
- 6
Simmer over medium heat for 2 to 3 minutes, repeatedly spooning the thickening sauce over the salmon until glossy and cooked through.
- 7
Transfer salmon to plates, pour over the remaining thickened glaze, and sprinkle with sesame seeds and chopped spring onions.
Mirin and cooking sake can be substituted with dry white wine or diluted rice vinegar with a pinch of sugar.
