Preparation
- 1
Drain the sauerkraut and rinse lightly if very sour, then roughly chop it. Peel and dice the potatoes into 2 cm cubes.
- 2
Heat canola oil in a soup pot over medium heat, add the diced onions, and cook for 5 minutes until soft and golden.
- 3
Add minced garlic, caraway seeds, and smoked paprika, stirring constantly for 30 seconds until fragrant.
- 4
Add the sauerkraut, diced potatoes, bay leaves, and vegetable broth to the pot. Stir well to combine.
- 5
Bring the stew to a boil, then lower the heat, cover, and simmer for 30 to 35 minutes until the potatoes are completely tender.
- 6
Season with salt to taste, discard the bay leaves, and ladle steaming hot into deep bowls.
Sauerkraut is widely available vacuum-packed or tinned in European aisles.
