Preparation

    Season the chicken thighs lightly with salt and sear in vegetable oil over medium-high heat until golden brown, then remove and set aside.

    In the same pot, fry the chopped onion, minced garlic, and grated ginger until fragrant and translucent.

    Add the tomato paste and tinned tomatoes, cooking down for 5 minutes.

    Whisk the peanut butter with 400 ml of warm water until smooth, then pour into the pot.

    Return the browned chicken thighs to the pot, add the diced sweet potato and crumbled stock cube, and bring to a simmer.

    Reduce heat to low, cover, and gently simmer for 30 minutes until the chicken is tender and the sweet potato is cooked through.
