Preparation

  1. 1

Peel the cassava root, remove the tough central fibrous vein, and chop into bite-sized chunks.

  2. 2

Boil cassava chunks in salted water for 15 minutes until tender, then drain and set aside.

  3. 3

Heat vegetable oil in a wide pan, then sauté chopped onion and garlic until fragrant.

  4. 4

Stir in the curry powder and cook for 1 minute until fragrant.

  5. 5

Pour in the coconut milk, bring to a gentle simmer, and gently add the cassava and spinach.

  6. 6

Nestle seasoned white fish fillets into the coconut sauce.

  7. 7

Cover and simmer gently over medium-low heat for 10 to 12 minutes until the fish flakes easily and the stew is creamy.

Cassava tubers and smoked or fresh fish fillets are widely available at international markets.
