Swap Feta cheese for Cheddar cheese (1:1) — A firm salty cheese keeps the same role in the salad
Preparation
- 1
Heat olive oil in a wide skillet over medium heat, add minced garlic, and sizzle for 1 minute until aromatic.
- 2
Pour in tinned tomatoes, breaking them up, along with dried oregano, salt, and black pepper.
- 3
Simmer sauce for 4 minutes until slightly thickened.
- 4
Drain and rinse cannellini beans, then stir them gently into the simmering tomato sauce.
- 5
Cook for another 4 minutes until the beans are heated through and saturated with sauce.
- 6
Crumble feta cheese over the top, cover the skillet with a lid for 2 minutes to let cheese soften, then garnish with parsley and serve.
