Preparation

Finely dice the red onions and cook them dry in a heavy pot over medium heat for 5 minutes until softened.

Pour in the vegetable oil along with minced garlic and ginger, cooking until aromatic for 2 minutes.

Stir in the berbere spice blend and tomato paste, toasting gently for 1 to 2 minutes.

Rinse the red lentils thoroughly and add them to the pot with 750 ml of water.

Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes until lentils are tender and creamy.

Season with salt to taste and serve warm with flatbread or rice.
Berbere spice is widely found in Ethiopian grocers or can be substituted with a blend of chilli, paprika, and cumin.
