Preparation
- 1
Finely dice the red onions. Heat canola oil in a saucepan over medium-low heat and cook onions until deeply softened and lightly caramelised, about 10 minutes.
- 2
Stir in the minced garlic and grated ginger, cooking for 2 minutes until fragrant.
- 3
Add the berbere spice and tomato paste, toasting them gently with the aromatics for 1 to 2 minutes.
- 4
Rinse the red lentils thoroughly and tip them into the pot along with the vegetable broth and salt.
- 5
Bring to a boil, then turn the heat to low, cover, and simmer for 20 to 25 minutes until the lentils are creamy and tender.
- 6
Stir occasionally to prevent sticking, adding an extra splash of water if needed for a velvety texture. Serve warm.
Berbere spice blend is traditional to Ethiopian cuisine; check international or East African grocers.
