Finely dice the red onions and cook them dry in a heavy-bottomed pot over medium heat for 5 minutes until reduced and slightly softened.

Add the vegetable oil, minced garlic, and grated ginger, stirring frequently for 2 minutes.

Stir in the berbere spice and tomato paste, toasting gently for 2 minutes to develop the deep aromatic flavors.

Rinse the red lentils thoroughly and add them to the pot with 700 ml of water.

Bring to a boil, then reduce heat to low and cover loosely.

Simmer for 30 minutes, stirring occasionally and adding a splash of water if needed, until the lentils are completely soft and thick.

Season with salt to taste and serve warm with flatbread or rice.
