Preparation

    Finely dice the red onions and cook them dry in a heavy-bottomed pot over medium heat for 5 minutes until reduced and slightly softened.

    Add the vegetable oil, minced garlic, and grated ginger, stirring frequently for 2 minutes.

    Stir in the berbere spice and tomato paste, toasting gently for 2 minutes to develop the deep aromatic flavors.
