Swap Coconut milk for Milk (1:1) — Keeps the sauce creamy when coconut milk is unavailable
Preparation
- 1
Cut the fish fillets into large chunks, season with lime juice, minced garlic, and salt, then set aside to marinate for 10 minutes.
- 2
In a wide shallow pan or clay pot, heat the olive oil over medium heat.
- 3
Layer half of the sliced onions, bell peppers, and tomatoes across the bottom of the pan.
- 4
Arrange the marinated fish pieces evenly over the vegetables, then cover with the remaining onions, bell peppers, and tomatoes.
- 5
Dust with paprika, then pour the coconut milk evenly over the layers.
- 6
Cover the pot and simmer gently over medium-low heat for 15 minutes until the fish is cooked through and flaky.
- 7
Sprinkle with abundant chopped coriander and serve hot with steamed rice.
Dendê oil is traditional in Bahia; coconut oil or palm oil makes a wonderful base.
