Preparation

Thinly slice the onions and rinse both lentils and rice separately.

Heat olive oil in a large skillet and fry onions over medium heat for 20 minutes until deeply golden brown and caramelized; set half aside for topping.

In a medium pot, cover brown lentils with 700 ml water, bring to a boil, and simmer for 15 minutes until partially tender.

Stir in the basmati rice, half the caramelized onions, ground cumin, cinnamon, salt, and black pepper.

Cover tightly, reduce heat to low, and cook for 15-18 minutes until rice and lentils are tender and liquid is absorbed.

Fluff gently with a fork and serve warm topped with the reserved crispy caramelized onions.
