Preparation

  1. 1

Slice beef sirloin steak thinly against the grain into bite-sized strips. Thinly slice the red onion into rings.

  2. 2

Mix smoked paprika, garlic powder, chilli powder, grated ginger, and salt in a bowl. Toss the sliced beef thoroughly in the spice rub.

  3. 3

Heat vegetable oil in a heavy cast-iron skillet or wok over smoking high heat.

  4. 4

Add beef strips in an even layer and sear undisturbed for 2 minutes to form a smoky, caramelized crust.

  5. 5

Toss the beef and stir-fry for 2 to 3 more minutes until just cooked through, toss with the raw red onion rings, and serve hot.

Suya spice blends (or Yaji) feature roasted peanut and chilli, replicated here with ground spices for quick ease.
