Dice the onion and bell pepper into small cubes. Rinse and drain one tin of black beans, leaving the second tin with its starchy liquid.

Heat red palm oil in a pot over medium heat, add the diced onions and bell peppers, and sauté for 4 minutes until fragrant and soft.

Stir in dried thyme and curry powder, cooking for 30 seconds.

Pour in both tins of black beans along with 100ml water and season with salt.

Bring to a vigorous simmer for 6 minutes, mashing a quarter of the beans with the back of a spoon to create a thick, savory gravy.
Red palm oil provides authentic color and rich flavor; vegetable oil can be substituted.
