Preparation
- 1
Wash the bok choy thoroughly, separate the leaves, and slice larger stems lengthwise into halves.
- 2
Roughly crush the garlic cloves and Thai bird's eye chillies together using the flat side of a knife or mortar and pestle.
- 3
In a small cup, stir together fish sauce, soy sauce, and sugar until blended.
- 4
Heat vegetable oil in a wok over high heat until wisps of smoke begin to rise.
- 5
Toss in the crushed garlic and chillies, stirring rapidly for 15 seconds until intensely fragrant.
- 6
Add the bok choy stems first, tossing for 45 seconds, then add the leafy greens along with the sauce mixture.
- 7
Stir-fry vigorously over maximum heat for 1 to 2 minutes until greens are wilted yet crisp and coated in garlicky gloss.
- 8
Transfer immediately to a warm serving plate and enjoy alongside jasmine rice.
Thai bird's eye chillies pack significant heat; adjust quantity to personal taste.
