Preparation

  1. 1

Blanch washed spinach leaves in boiling water for 2 minutes, plunge immediately into ice-cold water, then blend into a smooth green puree.

  2. 2

Heat ghee in a pan over medium heat and lightly sauté the cubed paneer for 2 minutes until just golden, then set aside.

  3. 3

In the same pan, toast cumin seeds until fragrant, then sauté finely chopped onion, garlic, and ginger until translucent.

  4. 4

Add finely chopped tomato and cook until oil begins to separate from the masala base.

  5. 5

Stir in garam masala, salt, and the blended spinach puree; simmer on low heat for 5 minutes.

  6. 6

Add the paneer cubes, gently stir to coat in the gravy, and finish with a swirl of heavy cream.

Paneer is sold in blocks in South Asian grocers or cheese aisles.
