Preparation

In a small bowl, stir together za'atar seasoning and olive oil until an aromatic paste forms.

Place pita breads in a large skillet or grill pan over medium heat to warm lightly for 1 minute.

Spread the olive oil and za'atar paste evenly over the top surface of each pita bread.

Scatter crumbled feta cheese over the top and cover the pan with a lid for 3 to 4 minutes until cheese is warmed and base is crisp.

Transfer to a board, top with sliced tomatoes and fresh mint leaves, slice into wedges, and serve hot.
