Slice halloumi cheese into thick 1-centimetre pieces and pat dry with kitchen paper.

Dice tomatoes and cucumber into bite-sized chunks, and chop fresh mint leaves.

Heat 1 tablespoon olive oil in a non-stick skillet over medium-high heat and sear halloumi for 2 to 3 minutes per side until golden crust forms.

Arrange the diced vegetables and mint on a wide serving plate, seasoned with a pinch of salt.

Lay the hot seared halloumi on top, sprinkle with fragrant za'atar, and drizzle with remaining olive oil and pomegranate molasses.
