Preparation
- 1
Peel the sweet ripe plantains by slicing off the ends and slitting the peel lengthwise.
- 2
Cut the plantains diagonally into 1.5 cm thick oval slices.
- 3
Heat the vegetable oil in a large skillet over medium heat until hot but not smoking.
- 4
Carefully place the plantain slices into the hot oil in a single uncrowded layer.
- 5
Fry for 3 to 4 minutes on the first side until deep golden-brown and caramelized.
- 6
Flip the slices with tongs and fry for an additional 2 to 3 minutes until tender all the way through.
- 7
Transfer to a paper towel-lined plate, sprinkle with a tiny pinch of salt, and serve warm.
Ripe plantains should have yellow skins heavily mottled with black spots for natural sweetness.
