Preparation
- 1
Mash the black beans smoothly in a small bowl with the cumin and a pinch of salt until pasty and thick.
- 2
In a medium mixing bowl, whisk masa harina with 0.5 tsp salt, then pour in 240 ml warm water; knead for 1 minute into a soft, pliable dough.
- 3
Divide the dough into 4 equal balls; using wet fingers, flatten each ball into a shallow cup shape.
- 4
Spoon 1 rounded tablespoon of refried bean paste into the center of each dough round.
- 5
Fold the edges of the dough up and over the beans to seal completely, then gently pat into a flat 1 cm thick disc without bursting.
- 6
Lightly grease a skillet or griddle with vegetable oil over medium heat.
- 7
Cook pupusas for 4 to 5 minutes on the first side until golden spots appear, flip, and cook the other side for another 4 minutes until puffed and cooked through.
Masa harina is dehydrated nixtamalized corn flour, essential for traditional pupusas and tortillas.
