Preparation
- 1
Boil egg noodles for two to three minutes until just al dente, drain, rinse with cold water, and set aside.
- 2
Thinly slice cabbage, julienne carrot, and finely mince shallots and garlic.
- 3
Heat one tablespoon of oil in a wok over high heat, crack in eggs, scramble quickly, and transfer to a plate.
- 4
Heat remaining oil, add shallots and garlic, stir-frying for one minute until lightly golden and aromatic.
- 5
Add shredded cabbage and carrot, stir-frying for two minutes until tender-crisp.
- 6
Toss in the cooked noodles, scrambled eggs, soy sauce, and sambal oelek, stir-frying rapidly for two minutes.
- 7
Serve immediately while piping hot from the wok.
Sambal oelek adds authentic Indonesian warmth; sriracha can be used as an alternative.
