Preparation
- 1
Heat the red palm oil in a saucepan over medium heat. Fry diced onions for 5 to 6 minutes until sweet and golden.
- 2
Add minced garlic, ginger, and chilli powder, stirring constantly for 1 minute.
- 3
Stir in the tomato paste followed by crushed tinned tomatoes, cooking the sauce down for 8 to 10 minutes until oil rises to the surface.
- 4
Add the rinsed beans and half a cup of water. Simmer on low heat for 15 minutes, stirring occasionally, and season with salt.
- 5
While the stew simmers, peel the plantains and slice diagonally into bite-sized rounds.
- 6
Heat vegetable oil in a frying pan over medium heat and fry the plantain slices for 2 to 3 minutes per side until deep golden and caramelized.
- 7
Drain the fried plantains on paper towels and serve alongside the rich bean stew.
Use ripe plantains with yellow skins marked with dark spots for maximum natural sweetness.
