Preparation

  1. 1

In a small bowl, whisk together soy sauce, mirin, granulated sugar, and grated fresh ginger until sugar dissolves.

  2. 2

Cut salmon fillet into 4 equal portions and pat thoroughly dry with paper towels.

  3. 3

Cut broccoli into florets and steam over boiling water for 4 minutes until vibrant green and tender; set aside.

  4. 4

Heat vegetable oil in a non-stick skillet over medium-high heat. Add salmon fillets skin-side down and cook for 4 minutes until skin is crisp.

  5. 5

Flip salmon carefully and cook the other side for 2 minutes.

  6. 6

Pour the prepared teriyaki sauce into the pan; reduce heat to medium-low and spoon the simmering glaze over the fish for 2 minutes as it thickens.

  7. 7

Serve salmon over warm short-grain rice alongside steamed broccoli, spooning pan sauce over top and garnishing with sesame seeds.
