Preparation
- 1
Slice the halloumi block into 8 even slices, about 1 cm thick, and pat dry with kitchen paper.
- 2
In a small bowl, mix olive oil and za'atar seasoning together to create an herb paste.
- 3
Heat a dry non-stick skillet over medium-high heat, add the halloumi slices, and sear for 2 to 3 minutes per side until golden brown and crusty.
- 4
Slice tomatoes and cucumber thinly, and pick fresh mint leaves from the stems.
- 5
Warm the pita breads in the pan or an oven for 1 minute, then spread the za'atar oil mixture generously across each round.
- 6
Top each warm pita with seared halloumi, sliced tomatoes, cucumbers, fresh mint leaves, and pitted olives before folding to serve.
Halloumi and za'atar seasoning are available in major supermarkets and Middle Eastern grocers.
