Preparation

Dice the onion, carrot, potato, and mince the garlic.

Heat olive oil in a large soup pot over medium heat and sauté the onion, carrot, and garlic for 5 minutes until softened.

Add the rinsed red lentils, diced potato, ground cumin, turmeric, and salt.

Pour in 1 litre of water, bring to a boil, then reduce heat, cover, and simmer for 20 minutes until lentils and vegetables are tender.

Puree the soup with an immersion blender until completely smooth and velvety.

Squeeze in fresh lemon juice, adjust seasoning, and ladle into bowls.
