Preparation

Wash and trim okra, then finely chop or grate half for body and slice the remaining into rounds for texture.

Finely blend tomatoes, half the red onion, and habanero chilli into a smooth purée.

Heat red palm oil in a pot over medium heat and sauté the remaining sliced onion for 2 minutes.

Pour in the tomato-pepper purée and simmer for 8 minutes until reduced and slightly deepened in color.

Add 300 ml of water, crumbled stock cube, and salt; bring to a lively boil.

Add chopped okra, stir gently, and cook uncovered for 6 to 8 minutes until bright green and tender.
Okra thickens the broth naturally without need for starch.
