Preparation
- 1
Marinate chicken thighs with Greek yogurt, turmeric, half the minced ginger, and half the minced garlic for 20 minutes.
- 2
Heat ghee in a deep pan over medium heat; add sliced onions and cook for 10 to 12 minutes until deeply caramelized and brown.
- 3
Add remaining garlic and ginger along with ground coriander and salt, stirring continuously for 2 minutes.
- 4
Add diced tomatoes and cook down for 5 minutes until soft and the oil starts separating from the masala base.
- 5
Add the marinated chicken thighs along with the yogurt marinade, searing and turning for 5 minutes over medium-high heat.
- 6
Cover pan tightly with a lid, reduce heat to low, and simmer gently for 20 minutes until chicken is tender and cooked through.
- 7
Uncover, stir in garam masala, simmer 2 minutes more, and finish with freshly chopped coriander leaves.
Ghee and whole spices are readily available at South Asian grocers or supermarket spice sections.
