Swap Feta cheese for Cheddar cheese (1:1) — A firm salty cheese keeps the same role in the salad
Preparation
- 1
Heat one tablespoon of olive oil in a wide frying pan over medium heat and sauté minced garlic for 30 seconds.
- 2
Add the spinach leaves and cook for 2 minutes until fully wilted; remove from heat and press excess liquid out with a spoon.
- 3
Roughly chop the wilted spinach and mix in a bowl with crumbled feta, shredded mozzarella, and black pepper.
- 4
Slice open each pita bread to form a pocket, or split horizontally, and stuff generously with the spinach-cheese filling.
- 5
Brush the outside of each pita with the remaining olive oil.
- 6
Toast in a hot dry skillet for 2 to 3 minutes per side until the pita is crisp and the cheese inside has completely melted.
