Season goat meat pieces with salt and brown them in vegetable oil in a large pot over high heat.

Add the sliced onion, minced garlic, and grated ginger, cooking for 5 minutes until soft.

Stir in curry powder and ground cumin, coating the meat and toasting for 1 minute.

Add diced fresh tomatoes and 500 ml of water, bringing the pot to a vigorous boil.

Lower the heat, cover securely, and simmer gently for 35 minutes until meat begins to tenderise.

Toss in the potato chunks and continue simmering for an additional 20 minutes until potatoes and goat are completely fork-tender.
